Bread of The Week - Sourdough!

So for this week the bread is sourdough! Sourdough is made when you ferment dough, using

lactobacilli and yeast.


Woah what is this! It looks like... some kind of code???
Lactis acid is produced by lactobacilli and it gives the bread a more sour taste, and that is where the sourdough we know and love comes from! It also improves how long the sourdough will stay edible.

The origins of sourdough are so ancient that almost everything about it must be pure speculation. One of the oldest varieties of sourdough dates back from around 3700 BCE. It was excavated in Switzerland, but the origin of sourdough fermentation relates to the origin of agriculture in the Fertile Crescent several thousand years earlier.
